This three Manchego cheese pizza recipe is ideal for making as a family, with help from the little ones, to enjoy a fun weekend afternoon and end with a family dinner.
Without a doubt, the most fun part for the kids is kneading the pizza dough. You can use whichever dough recipe you prefer — the base will always be water, flour, yeast, and salt.
Personally, I like to add a bit of oregano to the dough to give it some aroma.
My son really enjoys this process, and cooking with him also helps him learn about and try different foods.
Ingredients for making a three Manchego cheese pizza
The dough – if you don’t have time, you can also buy it pre-made, although trust me, you’ll be missing out on a very fun and educational time for your children.
Leaving the dough aside, here are the ingredients you’ll need to make your three Manchego cheese pizza with vegetables and grilled chicken:
- Tomato sauce (Always better if it’s homemade)
- Mild sheep cheese Gómez Moreno
- Aged Manchego cheese Carpuela
- Artisan truffle cheese Gómez Moreno
- Zucchini
- Mushrooms
- Fresh basil
- Fresh tomato
- Grilled chicken
You can always change it up with other ingredients you like more, while keeping the three-cheese concept at the core.
3 Manchego cheese pizza recipe
Before starting to prepare the three Manchego cheese pizza, preheat the oven to 250°C (top and bottom heat).
Roll out the pizza dough with a rolling pin and some flour to keep it from sticking. Once it’s stretched and shaped, place it on a pizza tray.
I like using trays with little holes, as they allow heat to pass through better and prevent condensation, resulting in a crispier crust.
With the dough ready, grate the three types of cheese. What we usually do is add more of the mild cheese, less of the aged cheese, and the least of the truffle cheese — but that’s entirely up to your taste.
Choose the Manchego cheeses that suit your preferences
Remember that even though we chose these specific cheeses, you can adapt the recipe with a semi-cured Manchego, aged cheeses, or even the manteca (lard-cured) variety.
Once everything is ready, spread a thin layer of tomato sauce on the dough using a spoon.
Next, sprinkle a layer of grated mild cheese as a base to your liking.
Then, slice the zucchini — if you’re keeping the skin on, make sure to wash it thoroughly. A mandoline slicer is perfect to get thin zucchini slices.
Now it’s time to add the aged Manchego cheese, which gives the pizza its bold flavor. We usually add about half as much as the mild cheese.
Next, slice some fresh mushrooms and add them to taste. Optionally, you can also add some diced fresh tomato.
We also added grilled chicken to half of the pizza, making one half a vegetarian three-cheese pizza and the other half with chicken.
We use the truffle cheese as a topping to finish off the recipe, always in smaller quantity than the other two cheeses.
To finish, add a few fresh basil leaves. (If you don’t have fresh basil, you can use dried basil.)
Baking a Three Manchego Cheese Pizza
Once your pizza is ready and the oven is at 250°C, place it on the bottom rack to get a crispy crust.
Baking time may vary depending on your oven, but about 10 minutes is usually enough.
Once your pizza is golden to your liking, take it out of the oven — and now for the best part, enjoy it with your family.
Pairing for a Three Manchego Cheese Pizza
We can’t say there’s just one perfect pairing for a pizza with so many flavors and ingredients.
Personally, we think it pairs really well with a chilled white wine, which, staying true to La Mancha, could be from a variety like Airén.
If you prefer beer, a craft blonde beer might be a great choice, as the notes it adds would pair well with the flavors.
