The world is becoming more globalized, and it’s increasingly common to adopt customs that aren’t originally ours—one of these is oriental food, specifically Japanese cuisine with its star dish, sushi. That’s why we’ve created a Manchego sushi recipe that’s finger-licking good.
It’s a dish that can be expensive if ordered out, so taking advantage of International Sushi Day, we want to show you a very simple and quick recipe that breaks the mold—and of course, we make it with our Manchego or fresh cheese. How long does it take?
We’re used to not having much time as we’re running around 24/7, so we’ve prepared this recipe that will take you barely 30 minutes of your time.
To cook the rice, we need about 20 minutes over medium heat. You don’t have to constantly watch it—just keep an eye on it occasionally.
And for the preparation, we ask for 10 minutes of your time to cut the ingredients, arrange them, and roll them up. Finally, you can enjoy our homemade oriental dish and a moment of relaxation and calm.

The following recipe is suitable for everyone—whether you’re a cooking enthusiast, a bit clumsy in the kitchen, or an expert. It’s so simple and innovative that you can make it for a special tasting with your partner or create a family occasion with your children where everyone takes part in making it.
Our dish will basically consist of cooking rice, cutting the ingredients, and wrapping them—the rest is about learning to slow down and enjoy the little things, like cooking with care and without much time, whether in the peace of solitude or turning it into a family moment. Either way, here we go!
What ingredients do we need?

What utensils are we going to use?
- Knife
- Pot
- Strainer
- Wooden cutting board
- Sushi mat (or any flexible surface)
How do we make “Manchego” sushi?
Before starting to prepare our recipe, it’s advisable to have all the ingredients ready first, as they are fresh products and it’s best not to spend too much time handling them.
For this, we’ll prepare slices of avocado, do the same with the cheese (also in strips), and with the salmon, so everything is ready when forming the makis.
Although it’s preferable to use the belly part of the salmon to cut it into strips, any part can be used depending on what works best for you.
The base of sushi is rice. Preparing sushi rice is very simple: cook the rice and then season it with salt, sugar, and vinegar. Let it cool.
Now cut the nori seaweed sheet in half and place it on a sushi mat (makisu) or any flexible surface covered with plastic wrap. Leave the rough side facing up and spread the rice on top, pressing gently so it sticks.
In the center, place the strips of fish, cheese, and avocado. If you like a spicy touch, you can add a little wasabi—but don’t overdo it.
Roll the seaweed using the mat, closing it so that you form a cylinder.
To serve, cut it into approximately 8 pieces using a moistened knife so the rice doesn’t stick. You can add some sweet soy sauce in a small bowl when plating to dip your “Manchego” sushi.
What wine pairs well with our “Manchego” sushi?
To accompany our dish, we recommend sparkling, white, and rosé wines for their acidity.
On one hand, sparkling wines—such as rosé cava made from red grape varieties—thanks to their low sugar content, effectively cleanse the palate. Without a doubt, the bubbles in cava pair wonderfully with this type of food. They also provide the acidity and freshness typical of a white wine.
And as for white wines, examples include Chardonnay, Sauvignon Blanc, or Verdejo. These wines also have high acidity but low tannin content and are usually dry.
In the case of Sauvignon Blanc, it stands out for its herbaceous notes and acidity, which pair well with the bitter and acidic flavors often found in sushi.
The Verdejo variety offers acidity and fresh fruit flavors that pair very well with Japanese cuisine.
Chardonnay pairs very well with this type of food.
Rosé wines would be a final good option, as they provide us with a wide range of nuances when accompanying Japanese cuisine such as sushi.
