For this new post, we bring you a delicious recipe for stuffed meat rolls—very easy to make and sure to please everyone.
We’ll fill them with sheep cheese and raisins—a combination that won’t leave anyone indifferent.
We’ll also serve them with some vegetables, which can be blended into a sauce or served alongside the rolls.
Ingredients for the meat rolls
- 2 packs of smoked bacon, we’ll need 4 slices of bacon for each roll
- 8 chicken breast fillets (preferably very thin). We’ll use 2 fillets for each roll
- 4 slices of cooked ham (if the slices are not very large, you can double the amount)
- Cheese to taste (you can use any of our Manchego cheeses); we used our truffle cheese.
- Raisins (you can omit them if you don’t like them)
- Salt and pepper
Ingredients to accompany the meat rolls
- 300 g of mushrooms (whichever you prefer); we used a mix of Shiitake, White and Brown Shimeji, and Eryngii
- 3 large carrots
- 4 shallots or 1 large red onion
- White wine
- Salt
- Spices to taste (we used pepper, dill, and rosemary)
Preparation of meat rolls
First, cut a rectangular piece of aluminum foil. Then start placing the bacon slices side by side, slightly overlapping at the edges.
Next, place the slice of ham on top—make sure to place it slightly higher, as it will shift downward when rolling.
Next, place the chicken fillets, and on top of them the cheese and raisins. We’ve cut the cheese in a staircase shape, just like the one we explained in the cheese board blog post.
Once all the ingredients are in place, start rolling everything up tightly. Finally, wrap the aluminum foil around it like a candy wrapper, leaving the seam side facing up.
Preparation of the sauce
In a pan over medium heat, pour a splash of extra virgin olive oil, then add the chopped shallot, julienned carrot, and a pinch of salt.
Next, add the mushrooms, a large glass of white wine, and the spices. Let the flavors blend, and remove from the heat before they are fully cooked.
We recommend doing this part before preparing the rolls, so when you put everything in the oven, you won’t have to wait.
Preparation of meat rolls and sauce
Once the sauce is halfway cooked and the meat rolls are wrapped, place everything on a baking tray.
First, add the mushrooms and carrots, then place the rolls on top. Remember to keep the seam of the aluminum foil facing up.
Next, place it in the oven, preheated to 180 degrees, and bake for about 30 minutes. The time may vary depending on the oven you have.
After this time, remove the tray from the oven and place it on a wooden board. Take the meat rolls out of the aluminum foil and put them on a plate. Add any juices released by the rolls to the vegetables and sauce.
Finally, you can leave the vegetables whole, as we mentioned at the beginning, or you can blend them and pour the sauce over the rolls. We chose to leave them whole to make the dish look more visually appealing.
As you can see, it’s a very simple and quick recipe to make for any day, especially if you have guests at home.
